That scene is not one city. Last trays at a hawker centre, a bakery, a night market, a taco truck. The cook can see the leftover. Ten or twenty people are still walking the aisle. They would have bought that tray if anyone had told them it existed.

Almost nobody does. Mystery bags dump whatever is left. Facebook Boost shouts at the wrong postcode. The hole is smaller: leftover tonight, one named item, the people nearby who asked.

Sample A — Why leftover exists (it is not a moral failure)

When to use: You are about to bin food and feel like you guessed the rush wrong.

Leftover at close is not because the cook is bad at guessing. It is how fresh food works. You cook for the rush. You cannot perfectly predict rain, a football match, a delayed train, a school holiday, or that one dish going viral at lunch. You over-produce a little so you are not empty at peak. Then close arrives and the extra is still there. Throwing it away has a cost. Discounting on a handwritten sign only works if the right person is already staring at the stall. Boosting a post to “people who like food” hits a thousand strangers and none of the twenty still on the street. The waste is the last tray and the last walkers never meet.

Sample B — The mystery bag is the wrong product

When to use: Someone tells you a rescue bag or “worth $30” is the leftover business.

Apps that sell surprise leftover made closing-time food a category. The bag is a lottery. Named leftover is a sale. Shoppers wanted dinner, not frozen cauliflower sold as virtue. Stalls do not want bargain tourists who never pay full price at 6pm. They want the ten people walking past at 8:40. Leftover tonight is commerce with a clock, not a donation.

When to use: Forty minutes to close, leftover in the pan, no money for ads.

Closing ritual: look at the pan, pick one leftover that is still good, name it, price it, say until when, tell only people who asked or who are nearby and opted in, kill the listing when gone, do not train a daily panic-discount. Analog version: WhatsApp the regulars who wanted that dish.
